Justin is super passionate about Graciano in McLaren Vale, see the variety having real purpose in the region due to its ability to hold good levels of acid while still achieving optimal ripeness in the warm climate. There are only seven hectares of Graciano planted in the McLaren Vale and this fruit sourced from two different vineyards, one just off the main street of McLaren Vale and the other from the Sellicks Foothills. Twenty five percent of the wine undergoes full carbonic fermentation. The remainder of the fruit is open top fermented and handled in the same way as the Grenache. After the two weeks of fermentation the wine is basket pressed to French oak barriques, ten percent new and the remainder old for twelve months then bottled.
