Dominique Portet Fontaine Cabernet Sauvignon 2020

In a fresher juicier take on Cabernet, the 2019 Fontaine comes from an excellent vintage which had excellent conditions for the variety. A more classic and elegant vintage with great rainfall and a late warm summer without a large heat spike. Which allowed for perfect ripening. The Fontaine Cab is a blend of vineyards in the Northern end of the Yarra Valley with small amount from the south. Both sections are medium YV altitude, clay based and broken sandstone. All are north facing with excellent positioning for Cabernet. Year after year these vineyards produce juicy, concentrated fruit with soft and silky tannins. A blend of Cabernet (86%), Merlot (6%), Petit Verdot (2%) all hand picked, they’re de-stemmed and gently crushed before fermentation. The wine stays on its skins for 2 weeks which gives it its deep colour and tannins extracted. It then sees 12 months in French Oak, 30% new. Bright red fruits, red currant, plum, bay leaf and cedar. Soft, medium bodied with plush ripeness on the palate. Lengthy juiciness that finishes dry with a hint of blackberry.
