Vincent Dauvissat stands as one of the preeminent producers in Chablis, renowned alongside Francois Raveneau for crafting wines that epitomize the essence of this distinguished wine region. The domaine’s reputation is built on the pillars of terroir expression, balance, and purity, making its wines highly coveted and tightly held by enthusiasts.
In 2002, the domaine embraced biodynamic farming techniques, prioritizing the health of the vineyards, although official certification was not pursued. The fourth generation, represented by Vincent’s children Ghislain and Etiennette, joined in 2013. Ghislain focuses on vineyard maintenance, while Etiennette oversees administrative tasks, ensuring a seamless continuation of the domaine’s legacy.
Vineyard practices at Dauvissat emphasize the significance of the grape-growing process. Rigorous pruning and ébourgeonnage lead to low yields, fostering a delicate balance for healthy vines and optimal fruit maturity. Biodynamic principles guide vineyard treatments, and all harvesting is done by hand to guarantee top-quality fruit for winemaking.
