Domaine Baudouin Millet
Domaine Baudouin Millet combines traditional Chablis terroir with a fresh, contemporary approach to winemaking. Originally established as a cereal farm, the domaine transitioned to viticulture in the 1980s under Philippe Millet, with his son Baudouin fully taking over in 2011.
The estate encompasses nine hectares of Petit Chablis, four hectares of Chablis, and a prized Premier Cru parcel in Vaucoupin. Small quantities of Grand Cru wines from sourced fruit in Les Preuses and Vaudésir, as well as Bourgogne Blanc and Crémant de Bourgogne, complete their portfolio.
Baudouin follows a philosophy of lutte ultra raisonée, prioritizing minimal intervention in the vineyard. In the cellar, stainless steel tanks (cuve inox) preserve the purity and finesse of the wines, with only rare use of oak for Grand Cru cuvées.
Stylistically, Domaine Baudouin Millet stands out for its emphasis on ripeness and depth, achieved by harvesting slightly later than neighboring producers. The result is wines with exceptional intensity and balance, offering both vibrancy and richness.
