La Perle is special cuvee/botting Baudouin make each year, a ’super Petit’ if you will. Pressed, settled, racked off to tank then fermentation in tank. The key difference to vs their estate Petit is they leave the wine for an extended period on lees. 9 months in tank with regular battonage.
Unusually for a Chablis Domaine Baudouin Millet has much more Petit Chablis than AOC Chablis (region-wide there is about three times more Chablis than Petit Chablis). They have nine hectares of Petit Chablis located in the south-east of the region, just within the commune of Poilly-sur-Serein. The vines are approaching 40 years of age and were the initial plantings by Philippe Millet in the early 1980s.

The fruit for this Chablis comes from old vines, approximately 65 years old, located in the East of the appellation. The vineyard soils are pure Kimmeridgian limestone. The fruit for this cuvee is traditionally fermented and matured in temperature controlled stainless steel tanks, on fine lees for six months. It’s a small botting for the domaine, approximately only 180 dozen made per year.

The fruit is sourced from a small 40 years old vineyard plot in Vaudesir, with the vines sitting on a layer of clay topsoil which gives this Grand Cru its unique characteristics. The fruit undergoes traditional vinification and elevage on its lees for twelve months. 50% in stainless steel tanks. 50% in second and third fill French oak barrels for depth and texture.
