Unico Zelo Origami Rosé 2022
The 2021 Origami Rose is Unico Zelo’s first release of what plans to be a permanent addition to their rip-tear-share range. They have released Rose in the past from a number of different varieties but were adamant to find the right blend, to create a classically dry style.
The main component of the blend comes from Polish Hill River, the same block of Sangiovese which forms part of their Truffle Hound red blend but picked earlier specifically for this wine. They love the floral characters this varietal brings to the blend. Add to this Grenache from the Riverland, a vineyard and variety they always wanted to use specifically for this wine, knowing it’s a classical base for some of the best expressions of dry Rose.
Similarly to the Sangiovese the Grenache is picked earlier to retain acidity. Laura highlighted that Grenache can lose a little of it’s natural aromatics when you do this hence the decision to blend with the Sangiovese. Smart cookie that one. Lastly a dollop so to speak of skin contact Pinot Gris from Adelaide Hills completes the blend.
All fermented separately. Picked and pressed specifically for Rose. Crushed, left in the press for 60 to 90 minutes then pressed off, fermented in tank. Very light press, virtually free run then settled in tank, racked and lightly filtered before bottling.
40% Sangiovese (Polish Hill River), 30% Grenache (Riverland), 30% Pinot Gris (Adelaide Hills)
