From the same historic Wallis Vineyard as its Chardonnay counterpart, planted by the Wallis family in 1992 and sitting between 110 and 142 metres above sea level. MV6 and 115 parcels handpicked and hand sorted separately, then fermented individually in 1 and 2 tonne stainless steel fermenters.

A 5 day cold soak before wild yeast fermentation averaging 18 to 21 days on skins, with a light programme of plunging and pumping over. Parcels kept separate through natural malolactic fermentation, then 11 months in a combination of 18% new and seasoned French oak puncheons and barriques.
