Boutinot’s involvement in winemaking in the Rhone Valley dates back to the early 1980s, spanning various locations across the region. However, their commitment deepened significantly with the acquisition of stunning vineyards, some boasting up to 50 years of age, in the AOP of Cairanne. This strategic move included the establishment of a permanent winery on-site.
Situated at altitude on the cooler, steep slopes of clay and limestone in the Pyrenees foothills, the Chenin Blanc grapes from this region are typically reserved for Cremant de Limoux. Yet, for this particular wine, the grapes undergo an extended ripening period on the vine. As one of the last varieties to be harvested, it achieves full ripeness while retaining a refreshing crispness attributed to the cooler altitude.
Emanating gentle citrussy and herbal aromas, this wine unfolds into a densely fruity, peachy palate with a silky texture and a clean, lifted finish. Its versatility shines, harmonizing beautifully with warmly spiced dishes.
