The Shiraz is sourced from five vineyards across the sub-regions of McLaren Vale. The fruit is cold soaked for two days then ferment starts naturally for ninety five percent of it, with twenty percent left as whole bunches. The remaining five percent undergoes full carbonic fermentation. Pumped over daily twice, once in the morning and again in the afternoon. It spends two and a half weeks on skins before being basket pressed to oak on full lees. Elevage is split between seventy five percent barrel and the remainder in 3500L large format for eighteen months in total, but after twelve months the wine is racked then returned to cask. Fifteen percent of the wine sees new oak.
