L.A.S. Vino ‘Southern Seas’ Chardonnay 2025

A new wine for 2025, and one worth paying attention to. Seeking cooler conditions after several warm dry vintages in Margaret River, Nic sourced fruit from the southern end of the Cape, where both the Indian and Southern Oceans shape the growing season. The result is a Chardonnay with naturally higher acidity, greater tension and a freshness that sets it apart from anything else in the range.

Hand-picked, chilled overnight and gently whole-bunch pressed, with only the free-run juice retained. Fermented and matured for eleven months in a combination of French barriques and amphora, no malolactic fermentation, bottled unfined.

Bright, precise and energetic, with a cool-climate purity that makes it immediately compelling. A debut vintage that already feels like a benchmark.
