From the same wild, untrellised biodynamic vineyard in Yallingup that produces the CBDB Chenin Blanc. Two kilometres from the sea, certified organic and left entirely to nature. No irrigation, no pruning, no chemicals. Pigs, geese and guinea fowl roam free between the rows. The vines produce with an intensity and concentration that is rare in Margaret River.
Hand-picked and sorted bunch by bunch, berry by berry, creating what Nic describes as a “black caviar” look in the fermenters. Naturally fermented as whole berries in large format barrels over thirty days, then matured for eighteen months in barrel with twenty percent new oak. Settled naturally before bottling, no fining.
Dark fruits, mulberry, plum and dark cherry, with a full, layered palate that rewards decanting and has the structure to age gracefully for decades. Only ninety-two dozen produced.
