Edoardo Dottori ‘Terre Salate’ Verdicchio dei Castelli di Jesi Classico DOC 2024

100% hand-harvested Verdicchio from a single organically managed vineyard in San Paolo, at the heart of the Castelli di Jesi appellation.

After harvest, the grapes undergo a strict selection on the sorting table before being gently destemmed and crushed. The must is cold-decanted overnight, allowing fermentation to start naturally at a controlled, cool temperature. The wine is aged on fine lees for six months and bottled by gravity after a light filtration.

The name Terre Salate (“salty soils”) refers to the vineyard’s calcareous clay composition, situated between the Adriatic Sea and the Apennine Mountains. This location creates a distinctive microclimate, sea breezes cool the vines by day, while mountain air refreshes them by night.

Vineyard work follows strict organic and regenerative principles, with the use of green manure and alternating leguminous and grass cover crops in the inter-rows.
