Pressed, settled then moved to barrel by gravity. Fermented in barrel (20% new) then elevage on lees for 10 months. Sourced from two parcels of village classified St Aubin. Au Bas de Jorcul at the top left border of St Aubin, East facing slope + Champ Tirant looking North East. Total plantings owned across these two parcels is just 0.63 of a hectare, average vine age around 35 years old.
