100% fermented in tank, no oak. Elevage in tank for approximately to 6 to 9 months, occasional battonage. Sourced from 2 parcels – First is a hilltop East facing parcel. 80 years old from En Jorcul, just outside St Aubin on the North West limits of the appellation on White Marls. The other part is left of the main road entering St Aubin from Puligny, again East facing of approximately 30 year old vines on the top of the hill called En Vollon, on top of redder clay based soils.
