Domaine de Durban Muscat de Beaumes de Venise 2020 37.5cl

This wine is 100% Muscat a petit grain grape variety. The grapes are hand harvested and sorted. The grapes are macerated in their juice for 4-5 days before fermentation to extract more aromas, a common practise for the region. The wine is fortified with neutral 96% grape spirit to 15% degree of alcohol. Domaine de Durban likes to find the delicate balance between the alcohol and the level of sweetness with balancing acidity always present. The residual sugar is 112g/l which is in the lower end with AOC stipulating a minimum residual sugar of 110g/l. The wine is fermented in temperature controlled stainless steel and then transferred to concrete tank for maturation. It will mature anywhere from 6 months minimum to 2 years in total whilst being bottled in gradual intervals.
