Domaine Chardigny Coteaux Bourguignons rouge 2019
Taken from their 20 hectares of organic vineyards (certified from 2019 vintage) this Coteaux Bourgignons is 100% hand picked Gamay, part destemmed part whole berry for ferment. Pierre Maxime describes to me it’s wild ferment with ‘semi’ carbonic maceration. 10 months elevage in tank. We found this whilst dining at Le Sette in St Germain Paris and got in contact straight away to import.A reminder that Coteaux Bourguignons AOP was established in 2011 and stretches from Auxerre in the North to Beaujolais in the south. It can be made from Pinot Noir, Gamay, Cesar and Tressot for the red wines and Chardonnay and Aligote for the whites.
