A delicious, semi-carbonic-style red that blends 50% whole bunch Nero d’Avola with 50% direct pressed Shiraz from the organic Omensetter vineyard. Fermented in half-ton mini tanks under anaerobic conditions to encourage intracellular fermentation. Brad uses the term ‘flooding the tank’ which is a great way to describe the process. Think whole bunches of Nero bobbing around in a sea of Shiraz juice, lots of mini ferments going on all at once.
Aromatic deliciousness is the result. Post ferment the wine was then aged for 6 months in seasoned French oak puncheons.
