Meet NYMPH—Brash Higgins’ copper-hued ode to the Mediterranean. This dry rosé is made from 50% Mataro and 50% Carignan grown on the red loam of Lennon Vineyard, and it’s bursting with texture, spice and a sweet-sour twist.
The 2024 vintage was whole-bunch pressed overnight and wild fermented in stainless steel, allowing the wine’s delicate aromatics to shine. On the nose, there’s wild strawberry, hibiscus tea, red apple skin and a little hint of cinnamon bark. On the palate, it’s savoury and mouth-coating, with flavours of dried nectarine and wild honey balanced by fresh acidity.
It’s not your run-of-the-mill pale pink. This is a rosé that demands food—and respect. A must-try for fans of Bandol, Tavel or just damn good Australian pinks with attitude.
