TROPICAL SUNRISE 2020
Sauv Blanc, Moscato, Pinot Gris

All three varieties were wild yeast fermented separately, they spent three weeks on skins in stainless steel tanks and then left on lees in old oak for six months. The three varieties were then blended to create the final wine after going through full malolactic fermentation. Think aromatic tropical flavours of passionfruit and guava combined with bright acidity to deliver a highly refreshing textural wine.

 

MORNING STAR 2021

This wine is 100% Pinot Gris sourced from Galli Estate in Sunbury. Wild fermented in stainless steel, the wine spends two weeks on skins and then is pressed off to old oak for 7 month elevage and goes through full malolactic fermentation in oak. Full of texture with notes of Turkish delight with a Campari and orange rind like finish.

 

LUNAR POOL PARTY 2022
Moscato Pet Nat

This Pet Nat is made from 100% Moscato from a single vineyard on the Mornington Peninsula. From Bittern Estate the wine starts fermentation in stainless steel, it spends two weeks on skins and is then moved to old oak for six months in old oak and from there moved into bottle. The nose on this wine is delightful, full of musk sticks and lychees, the lychee carries over onto the pallet with apricot nectar and has a dry finish.

 

FLAMINGO PUNCH 2021
Dolcetto Pet Nat

100% Dolcetto from Bittern Estate on the Mornington. The wine starts fermentation naturally in old barrels, it spends four days on skins and is then pressed of back to barrel. From there it is moved to bottle, given a light dose of sugar and fermentation starts again to give the wine its effervescence. The wine is full of raspberries, plums, strawberries and cream. With a little herby, spicy twist on the finish, the wine is bright and fresh with a dry finish.

 

THUNDER SNOW 2021
Syrah Pinot Noir

This year Thunder Snow is a 60/40 blend of Syrah and Pinot Noir. 30% whole bunch ferment, this wine is light, bright and fun. Crunchy fresh cherries, currents, strawberries and cream.
12 months in neutral French oak. Natural ferment. No finings or filtration with minimal sulphites.

 

MORNINGTON CHARDONNAY 2021

Single Vineyard Chardonnay from the Mornington Peninsula. Nectarines, lemon zest and vanilla spice. 50% new French oak in puncheons and barriques balanced again with great cool climate acidity. No fining or filtration. Natural fermentation. 13.3% alc.

 

MORNINGTON SYRAH 2021

The fruit for this wine comes from a very cool site in the south east of the Mornington Peninsula, giving it great natural acidity, loads of pepper and spice and intense red berry fruit.
50% Whole bunch. 20% new French oak in a combination of puncheons and barriques.
Natural ferment. No fining or filtration. 13.2% alc
