Certified Organic

The Domaine owns less than 0.7 hect across 2 parcels. One on the top of the hill behind Vaillons. (20 year old vines) & the second one behind the Grand cru, more specifically Preuses on the plateau (40 years old). Pressed straight into tank, no pre ferment racking or setting, wild fermentation, malo finished in tank. Petit Chablis then see 10 to 12 months elevage total in tank before bottling.

“From two plots, one on the plateau, the other old vines behind Montmain. Pale light yellow, very herbaceous, grassy notes. A few lemony notes too. Lean pure style with grip. A bit of spice behind” –  Jasper Morris MW – Inside Burgundy

The Domaine owns 1.8 hectares across 4 parcels, all situated between the 1er Cru of Vaillons and Montmains. North West exposition. 1 plot of 20 year old vines, 1 plots of 45 years old and finally 2 x parcels 60 year old vines. Lilian explains when you have the benefit of old vines their ‘experience’ as he put it helps to negate the warmer weather, they are not so easily influenced by these factors. Pressed straight into tank, no pre ferment racking or setting, wild fermentation, malo finished in tank. Petit Chablis then see 10 to 12 months elevage total in tank before bottling.

“Pale lemon in colour. There is, some reduction to the nose and a little bit of the same grassy style. Excellent tension on the palate, medium bodied, the Duplessis 2019 Chablis sits on the fence between the natural austerity of this wine’s typical character and the riper style of the vintage” – Jasper Morris MW – Inside Burgundy

CHABLIS 1ER CRU FOURCHAUME 2018
Certified Organic

“The 2018 Chablis Fourchaume 1er Cru does not muck about on the nose and delivers quite a potent, marine-influenced nose of shucked oyster shells mixed with a distant tang of kelp. Wonderful. The palate is very well balanced with a fine bead of acidity, taut and fresh, leading to a vibrant, complex and very persistent finish. This is some of the finest Fourchaume I have tasted from Duplessis. Bravo!” – 94 points – Neal Martin

“The 2018 Chablis Fourchaume 1er Cru emerges from two adjacent parcels that measure a total of 0.5 hectares. Rich, ample and creamy, the 2018 shows all the textural resonance this site is known for. Apricot, white flowers, spice and vanilla are all woven together in a Chablis of total class and pedigree. I am surprised by how well the 2018 shows, given that it was racked on the morning of my tasting. There may very well be more here” – 92-94 – Antonio Galloni

CHABLIS 1ER CRU MONTMAINS 2018
Certifed Organic
Bottle Shot

3 hectares. Biggest parcel of the Domaine, across 2 parcels both over 80 years old. One parcel on the border between Montmains & Foret and then the second one in Foret ie both straddle the line but he bottles both together as 1er Cru Montmains. Character – Very straight, weight in the mouth. Tension, more intellectual. Lilian’s favourite Cru, typicity of Chablis as he puts it. Notes for vinification and elevage are the same for the other 1er Cru’s, noted under MDT

“The 2018 Chablis Montmains 1er Cru has an immediate nose featuring white flowers and linseed aromas that are both detailed and focused. The palate is well balanced with a fine line of acidity and plenty of race and vibrancy, although the saline finish requires a little more focus. That might come with bottle age. All in all, a splendid Montmains” – 92 points – Neal Martin

CHABLIS 1ER CRU VAILLONS 2018
Certified Organic
Bottle Shot

1.5 hect across 4 parcels. Minots, Chatains, Epinottes and Vaillons. Average age of 60 years old. All parcels vinified separated then blended before bottling. Across the 1er Cru’s this wine is often seemingly the most ‘exotic’, perhaps not in terms of weight but aromatics.

“The 2018 Chablis Vaillons 1er Cru is a blend of three climats in Vaillons, each vinified and raised separately and then blended prior to bottling. Citrus and floral notes add brightness to this decidedly taut, vibrant Vaillons. Readers will have to be patient with the 2018. There is plenty to look forward to, though. This is a Chablis with real potential” – 91-93 Antonio Galloni

CHABLIS 1ER CRU MONTÉE DE TONNERRE  2018
Certified Organic

Bottle Shot

1.20 hectares and the oldest one in the Domaine, more than 80 years old. On the ‘P’ on the map as Lilian points out (The P of Pied d’Aloue), top of the slope. Bedrock, thin soils. The plot is South East facing, on the ridge. Pressed straight into tank, no pre ferment racking or setting, wild fermentation, malo finished in tank and left on lees for 6 months. Then transferred to barrel, 10% new, total elevage of 12 to 18 months vintage dependant.

“The 2018 Chablis Montée de Tonnerre 1er Cru is another stellar wine in this range. The 2018 emerges from two parcels totaling 1.2 hectares in the Pied d’Aloup climat, the highest part of Montée de Tonnerre, which likely explains its energy, brightness and focus. Citrus, white flowers, crushed rocks, white pepper and chalk add striking aromatic top notes to this finely sculpted Chablis. I loved it” – 93-95 – Antonio Galloni

CHABLIS GRAND CRU LES CLOS 2018
Certified Organic
Bottle Shot

Duplessis own a precious 0.30 hectares in Les Clos 1% of the Grand Cru. Situated in the middle of the Cru, South Exposition. 55 years old vines. Duplessis ferment in the same manner as the 1er crus but of course due to the terroir offers a richer, more dense style of Chablis.

“The 2018 Chablis Les Clos Grand Cru, the only Grand Cru in this range, is powerful and explosive in the glass, with tremendous energy and brightness that gives the wine its personality. Tense and vibrant in the glass, the 2018 pulses with real energy. At this stage, the Clos is very clearly an infant. It’s all about potential here today, and there is plenty of that” – 92-94 – Antonio Galloni
